The Most Amazing Salads

I have become a true addict. To salads that is. I keep discovering new combinations of ingredients that make each one so unique and explode with flavor! Like yesterday, I created a blend of raw and grilled veggies that has now become my number one favorite of favorites!

Red leaf lettuce (without the stems)
One avocado cut up
Caramelized onion, garlic, and brussel sprouts
I could eat this combo morning, noon, and night!!!!!!

Combining these warm and cold ingredients together gave my palette a thrill beyond description. I only wish I would have thought to try these random combinations years ago. But I think I'm starting a new trend in my kitchen, because warm/cold salads are about all I want to eat now. Breakfast, lunch, and dinner.

Some other recent discoveries include:

Mixed greens
Cucumber cut up in small pieces
Avocado diced
Caramelized onion, then add diced tomato to the skillet just to warm them up a bit

**********************************************

Baby greens and baby spinach
Caramelized onions warm from the skillet
Cooked peas
Shredded cheese

**********************************************

Romaine lettuce
Olives
Roasted tomatoes or peppers right out of the skillet
Parmesan cheese

**********************************************

Romaine lettuce
Cooked black beans
Caramelized onion and garlic
Caramelized peppers
Goat cheese

**********************************************

Romaine and Iceberg lettuce
Diced tomatoes
Lots of caramelized onions
Mozzarella on top (the warm onions will soften the cheese - THIS... is total pig out food!)

The list could go on. The main idea is to use a blend of cold/raw and warm/caramelized ingredients. You'll be hooked in no time, and challenged to explore new combinations, depending on what's available in your fridge. Please feel free to add to this list! I love new ideas!

Happy summer eating, staying healthy and loving every bite!

P.S. No bottled salad dressing allowed!
